@InvaderXan how do you make yours? We've still to learn how to make some that don't fall apart.

@maloki When using fresh ingredients 鈥 finely(!) chopped onion, garlic, and parsley, spices (usually ground corriander seed, a pinch of cumin, and a little chilli powder), salt, mashed chickpeas, gram flour, and a little water.

The gram flour and water helps to bind it. If the mixture's too crumbly, I sometimes add a little wheat flour for extra binding.

I prefer to use dried chickpeas, soak them for a few hours (ideally overnight), then soften them by simmering them in boiling water for a while, first. The canned chickpeas are sometimes too mushy, which can be a little difficult to work with.

Also, I emphasised chopping the onion finely, because they tend to fall apart more easily if the onions are too chunky.

@InvaderXan none of the recipes I've ever read had that in it. But it was Swedish recipes and I had never heard of that kind of flour until after I moved I think. 馃
