Hey @neauoire, any tips on what to do when the brine level has dipped below where the top of the sauerkraut is? Is it better to leave it exposed to air or just pour in some extra water?
@tty mhmm, I think it should be alright to be exposed. There's probably enough good bacteria in there to fight off mold :)
@neauoire Huh, so it sounds like it's perhaps more important in the initial stages of the ferment that the cabbage is fully submerged (i.e. when the bacteria battle is more precarious) vs after the bacteria we like have basically conquered the entire jar.
